In 1968, Serge FAUS, Joëlle’s father, made the decision to transition to organic farming practices. The pioneers of organic farming had no blueprint to work to when they started out, meaning they had to “improvise” a new approach to viticulture. This was a major risk as the transition involved the entire vineyard. At the beginning, everyone was excited at the idea of breaking new ground in viticultural methods, but then doubt set in and soon started to pervade the day-to-day work. The family refused to bow to adversity though; on the contrary, it united them in their determination to rise to the challenge and make this ambitious project a resounding success.

“Organic viticulture” has a long way to go, but just look how far it’s already come since its inception...

When he first started organic farming, Serge Faust developed the transition using the LEMAIRE-BOUCHER method.

In 1984, José ARDINAT and his wife decided on a change of direction by adopting NATURE & PROGRES specifications.

Since 1995, the vineyard has been regulated by ECOCERT.

In 1997, Christophe ARDINAT joined the family firm, injecting fresh impetus and further developing the family’s now well-established organic wine growing methods.

Our 8-ha vineyard is located entirely within the VANDIERES municipality, in the heart of the Marne valley.
Our south-facing plots lie on a clay-limestone soil, the cradle of Pinot meunier, which accounts for a major part of our vineyard.
In addition to Pinot Noir and Chardonnay, we also produce other cuvees.Traditionally, organic farming works the land all year round, using mechanical and manual means; the vines are protected using only natural products, with no synthetic additives.

to the cellar

The grapes are harvested entirely by hand, and only when they are fully ripe.
Soft pressing the grapes extracts the very best of our terroir.
After giving the wine musts time to settle, the juice is placed in oak barrels. This is where the magic starts to happen - with the alcoholic and malolactic fermentations gradually transforming the grape harvest into the wine that will be bottled in March. Our wines are not filtered, and the chilling process takes place naturally during the winter period.
